- 90 grams of rye flour;
- 90 grams of wheat flour;
- 180 grams of oatmeal;

- 1 tablespoon of liquid buckwheat honey;
- 1 ½ tsp of sunflower oil;
- 300 ml of warm water;
- 450 ml of dark beer.
Grind the oat flakes into a blender into a coarse powder. In a large bowl, combine both types of flour and ground flakes, yeast and salt. In a vessel mix water, honey and sunflower oil. Combine the liquid and dry ingredients, add the beer and knead the dough well. Cover with a damp towel and leave in a warm place for an hour. When the mixture starts to bubble and rise - the dough is ready. Fry the tortillas like pancakes on a hot, wide, heavy, best of all, cast iron pan, pre-oiled. Serve hot with sour cream or jam.

Ginger rye cookies

Rye flour gives this cookie a special flavor that you will definitely appreciate. You will need:
- 1 cup of softened butter;
- ½ cup of fine sugar;
- 1 chicken egg;
- 1 cup rye flour;
- 1 cup of wheat flour;
- 1 teaspoon ground ginger:
- 1 teaspoon cinnamon;
- 2 teaspoons baking powder:
- 3 tablespoons of coarse sugar.
Whisk the softened butter and the fine sugar. Add the egg, continuing to beat. Sift both types of flour with dry powdered spices. Gradually mix the mixture into the egg-oil mixture, adding no more than ¼ cup of dry ingredients at a time. Lightly dust the surface with wheat flour and lightly knead the resulting dough. Collect it in a ball and, wrapping with cling film, put it in the refrigerator for a period of 1 hour to 2 days. Such a dough may lie in the freezer for longer than a month.
Preheat oven to 180 ° C. Roll the finished dough into a ½ centimeter thick layer. Using special molds cut cookies. Place it on a baking tray covered with parchment and sprinkle with large sugar. Bake until light brown for 10 minutes.Allow to cool and serve or store in an airtight container.
