Sodium Girl's Steak Salad with Arugula and Grapefruit

red or pink grapefruits
2 tbsp. fresh lime juice
2 tbsp. olive oil
Unsalted roasted pepitas (hulled pumpkin seeds)
- Heat broiler. Line a broiler-proof rimmed baking sheet with foil. Place the steak on the prepared pan and season with 1/4 teaspoon each salt (if using) and pepper. Broil to desired doneness, 4 to 5 minutes per side for medium-rare. Transfer to a cutting board and let rest for at least 5 minutes before slicing.
- Meanwhile, cut away the peel and white pith from the grapefruits. Cut the grapefruits into segments. In a small bowl, whisk together the lime juice, olive oil, and 1/4 teaspoon each salt (if using) and pepper.
- Dice the avocado. In a large bowl, gently toss the arugula, cilantro, avocado, grapefruit, and sliced steak. Drizzle with the lime juice mixture and sprinkle with pepitas, if desired.
