Kidney pickle recipe


Pickle with kidneys is a thick and rich dish. Both beef and pork kidneys are suitable for its preparation. The secret to a delicious soup is the proper preparation of by-products.

Recipe for pickle with beef kidneys

Kidneys must be thoroughly cleaned of all films and fat.

Kidneys have a peculiar smell. To completely get rid of it, offal is soaked in water or milk for 3-4 hours. You can leave them in the fridge all night.

  1. Buds cook in unsalted water for at least an hour. The broth is not suitable for cooking soup, so it needs to be drained.
  2. Grate carrots, chop onion into thin half-rings. Season the vegetables in butter for 10 minutes.
  3. Cucumbers finely chopped, add to vegetables.Stir, pour 50 ml of hot water. Simmer for 5 minutes more.
  4. Cut potatoes into small slices. In a saucepan, boil water and salt. Put there potatoes, cook until half ready.
  5. Cut the buds, add them to the soup.
  6. Add vegetable dressing.
  7. Pour 100 ml of cucumber pickle into the soup. Simmer for another 10 minutes.

Rassolnik is served for lunch, seasoned with mayonnaise, can be sprinkled with chopped greens.

Pickle with kidney and pearl barley

Pork kidneys are used for this recipe. They are soaked for 4 hours in cold water, during which time the water is changed twice.

Ingredients Required:

  • 500 g of pig kidneys;
  • 400 g of potatoes;
  • 60 g perlovki;
  • 2 onions;
  • 1 carrot;
  • 2-3 pickled cucumbers;
  • 150 ml of cucumber brine;
  • 20 g of vegetable oil;
  • Salt, spices.

A separate preparation requires pearl barley. It is washed, poured 200 ml of boiling water and leave to swell for 1 hour.

  1. Kidney bring to a boil, drain the primary broth. Water again, boil for about an hour. Broth again to drain. Cool the kidneys, cut into pieces.
  2. Chop carrots into thin strips, cut onions into rings. Fry in vegetable oil for 5 minutes.Add shredded pickles. A few more minutes fry over low heat.
  3. Cut potatoes into cubes. Boil water, salt, put potatoes and barley there, cook for 15 minutes.
  4. Add chopped buds.
  5. Introduce cucumber dressing with vegetables, pour in cucumber pickle.
  6. Simmer the soup for 5 minutes.

Serve to the table with sour cream, chopped dill.

Spices are added to pickle. Suitable shredded celery root, bay leaf, black pepper peas, allspice.
