Ingredients
1/2 lb.

orecchiette

thin sliced chicken cutlets (about 12 ounces total)

Kosher salt and ground black pepper

3 tbsp.

extra-virgin olive oil

2 tbsp.

red wine vinegar

1 tsp.

dried oregano

Kosher salt and ground black pepper

English cucumber, cut into half moons

halved cherry tomatoes

1/2 c.

pitted kalamata olives

small red onion, thinly sliced

1/4 c.

crumbled feta cheese

1 tbsp.

chopped fresh dill

Directions
  1. Bring a pot of well-salted water to a boil. Cook the pasta according to package directions. Season the chicken with salt and pepper. Heat a grill pan over medium high and spray the grill pan with cooking spray. Add the chicken and cook until good grill marks form, about 5 minutes. Flip and continue to cook until cooked through, about 4 minutes more. Transfer the chicken to a cutting board and cut into bite size pieces.
  2. In a large bowl, whisk together the olive oil, vinegar, oregano, a pinch of salt, and a few grinds of pepper. Add the cucumber, tomatoes, olives, onion, feta, and dill. Drain the pasta and toss into the vegetables in the bowl with the chicken to combine. Season to taste with salt and pepper and serve hot, cold, or room temperature.
